Suroviny
- 2 eggplants
- 1 cup walnuts, chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- 1/4 cup chopped parsley
- Salt and pepper to taste
- Olive oil
Postup
- Preheat the oven to 400°F (200°C).
- Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/2 inch thick shell. Chop the flesh and set aside.
- In a pan, heat some olive oil and sauté the onion and garlic until softened.
- Add the chopped eggplant, walnuts, cumin, paprika, cinnamon, salt, and pepper. Cook for about 5 minutes until everything is well combined.
- Stuff the eggplant shells with the mixture and place them on a baking sheet. Drizzle with olive oil.
- Bake in the preheated oven for about 25-30 minutes, until the eggplant is tender.
- Sprinkle with chopped parsley before serving.
